Michelin Starred Head Chef - IDAM

Fabrice Rosso was born in Nice in 1993, France where he graduated with the highest score within the Academy, from Lycée Paul Augier, one of the oldest culinary schools in the country. 2024 he received his first Michelin Star for his work at IDAM in the Museum of Islamic Arts in Qatar.

Less is more - every ingredient has the potential to ignite an explosion.

From Monaco to Qatar

He began his culinary career at the Royal Riviera in St Jean Cap Ferrat, then worked for two-Michelin starred Robuchon restaurant in Monaco and La Chevre D or under Chef Ronan Kervarrec in France. Having dual nationality of French and DuFrom Monaco tch, Fabrice also joined Michelin starred restaurants in Switzerland and Holland such as Suisse Terminus under Didier de Courten two Michelin stars, The Leest under Jacob Jan Boerm three Michelin stars.

He then joined three Michelin starred Le Doyen Paris under Yannick Alleno. With more than fifteen years of cooking, management, menu development and menu engineering experience - ten of which in Michelin starred restaurants, Fabrice joins the DUCASSE Paris Chefs in Doha as the Head Chef of IDAM by Alain Ducasse.

“Honest and Warm for the Soul”

Inspiration comes in a lot of different ways, not always controlled, sometimes it just happens.

It comes from art, like paintings, eating in restaurants, doesn’t even have to be fine dining ones, Instagram, books, seeing sometimes just the products, the ingredients;

and my favorite one, my memories. I like to transmit in my dishes things that I felt as a child eating certain dishes.

It is a great honour to be registered in the Michelin guide that is coming very soon, we take it very seriously and we put in an enormous amount of energy and work in making IDAM what IDAM is today, our guests know and we do hope that the Michelin guide will have the same eye.

How do I express myself in my dishes? I would say that I make my dishes with all my heart, I’ll never serve a dish that does not convince me. I would say our dishes are honest, without pretention and warm for the soul.
