South of France in a dish , Red mullet stuffed with kumquat and fennel condiment, cooked on the flames , dots of authentique" rouille" sea fennel , quenelle of kumquat chutney and Bouillabaisse prepared as a flavorfull sauce.

Maybe my favorite dish of the menu , natural way cooked leaks finished on the flames, brown crab claws glazed with crustacés butter , herbs, garlic and non alcoholic white wine , pickled and fresh aromatic herbs, toped with caviar, vinaigrette

Sometimes doing something different is nice too, traditional pastries for the Marrocan night .
