The Silence of the Pass

For a chef, the kitchen is a sanctuary of controlled chaos. We live by the ticking of the clock, the roar of the ventilation, and the staccato rhythm of knives on boards. But lately, the doors at IDAM have remained closed, and the “Silence of the Pass” has replaced the adrenaline of the service.

It is a strange transition. To go from the pinnacle of Doha’s culinary landscape—perched atop the Museum of Islamic Art—to the quiet of one’s own thoughts is a challenge for any creator. Yet, as I sit with this forced stillness, I realize that while the building may be silent, the alchemy hasn’t stopped. It has simply changed state.

Archiving the Rituals

For the past three years, we didn’t just cook; we experimented. We pushed the boundaries of terroir, merging classical French precision with the ancient preservation rituals of the Middle East. We transformed camel fat into complex charcuterie and elevated the humble celeriac to a centerpiece.

I am spending these days ensuring that the soul of that work is preserved. I have moved from the heat of the pass to the discipline of the page, meticulously archiving over 80 recipes and technical rituals into what I call The Alchemist’s Library. This isn’t just a collection of ingredients; it is a codex of memory and texture.

A Global Palate, a Local Pause

My heritage has always been a mosaic—born in Nice with roots stretching from Italy and Hungary to Indonesia and the Netherlands. This multicultural upbringing taught me early on that curiosity is the only constant. It is what allowed me to bridge worlds at IDAM, and it is what keeps me creating now, even without a brigade behind me.

This pause has given me the rarest of ingredients: time. Time to refine new concepts, to rethink the architecture of a dish, and to prepare for the next evolution of my journey. The fire hasn’t gone out; it is simply intensifying in the laboratory of the mind.

The Journey Continues

To my colleagues, the foodies, and the community that has supported our vision at IDAM: the knowledge remains. I am opening my notebook to you because I believe that the “Curious Alchemist” lives in anyone who sees ingredients not just as food, but as a medium for emotion.

While we wait for the doors to reopen and the fire to return to the pass, I invite you to explore the foundations of my philosophy.
