
My Journey into the Heart of Qatari Terroir
In the culinary world, we often speak of “roots.” But for a chef, roots are not just a metaphor; they are the literal foundation of every flavor we create.
I have always believed that to cook with soul, you must respect the ground where you stand. I traveled to Heenat Salma Farm in Al Shahaniya — a 50-hectare sanctuary dedicated to permaculture and regenerative agriculture — to listen to what the Qatari soil has to say. For me, this was not just a visit; it was a research expedition into the heart of a “Third Culture” culinary identity.
Beyond “Greenwashing”: A Commitment to the Essential
In our industry, it is easy to speak about being “green” while still flying in herbs and flowers from the other side of the world. I have no interest in that kind of greenwashing. At IDAM, we strive for an absolute truth in our ingredients.
We are establishing our own dedicated garden plot at Heenat Salma. Here, the farm grows our specific herbs, edible flowers, and seasonal vegetables. By working with products from our immediate area, we ensure that the innovation we practice in the kitchen is fueled by the most authentic local produce.
The Alchemist’s Laboratory in the Field
Walking through Heenat Salma, I saw the raw potential of the desert transformed into an organic haven of vegetables, medicinal plants, and traditional fruits. As part of my mission to expand The Alchemist’s Library, I am integrating these local treasures into our daily rituals.
Whether we are delicately suspending seafood over a Konro grill or utilizing the farm’s nutrient-dense produce to ground a dish, the goal is the same: to create a dialogue between the earthy warmth of the Middle East and the rigorous standards of French haute cuisine.
This collaboration is not just about a single visit; it is a long-term commitment to the ecology, society, and culture of Qatar. The fire is lit, and the best — grown right here in our own soil — is yet to come.
